This is my basic, quick and easy mayonnaise recipe that I have made for years. I based it off of the recipe in the Nourishing Traditions cookbook by Sally Fallon.
All you need is: Eggs at room tepmerature, mustard, lemon juice, garlic, salt, avocado oil and a blender.
Add everything but the oil to the blender and start blending on high speed.
As soon as your blender gets up to speed slowly pour in the oil while continuing to blend.
Keep pouring until the mixture is thick and won’t take more oil.
You can see in the image below how there is a little oil left on top once it thickened.
Caution: Once in a while, when the planets are off kilter or the eggs were a little too cold, my mayonnaise will seperate (or break) while blending. This has only happened to me a couple of times. I have been able to save the batch by taking the mixture out of the blender. Add a new warmer egg, along with a bit more of the other ingredients. Then slowly pour the broken mixture back into the blender adding more oil if needed.

- 2 eggs
- 1 tbsp mustard
- 1 tbsp lemon juice
- 2 garlic cloves
- 1 pinch salt
- 1-2 cups avocado oil
Instructions
- Add all ingredients except the oil in the blender and blend on high.
- Slowly add avocado oil till mixture is thick.
